Lemony BBQ Chicken
1 package chicken leg quarters
1/2 cup of lemon juice
vinegar
1/2 stick butter
1 teaspoon black pepper
canola or olive oil
garlic powder
seasoned salt
1. Lay out chickens and rub on oil. Season with garlic powder and seasoned salt.
2. In a pan, melt butter on medium heat; once melted, add lemon juice and pepper.
3. Add vinegar.
4. Grill chicken at about 300-350°F adjusting temperature as needed.
5. Baste with lemony butter mixture when turning.
6. When the chicken is just about done, stop the basting so that the chicken will become crispy. Serves 4.

Smothered Chicken
INGREDIENTS
1 quart vegetable oil for frying
4 lbs. chicken, cut into pieces
Salt and pepper to taste
1 1/2 cups all-purpose flour
8 red potatoes, quartered
3 cloves
DIRECTIONS
1. In a large skillet, heat oil for frying. Season the chicken pieces with salt and pepper to taste. Flour the chicken lightly twice.
2. Drop coated chicken into hot oil slowly to prevent splatters. Fry until golden brown.
3. Boil potatoes. When potatoes are soft, remove from heat. Set water aside.
4. When chicken is done, drain oil out of the skillet and place the potatoes in the skillet with the chicken. Slowly pour the set aside water over the skillet mixture.
5. Add whole cloves, cover and simmer. Allow the mixture to simmer until the gravy is to your liking. Then remove from heat and serve.
