SLOW COOKER BBQ RIBS

BONELESS PORK LOIN ROAST  

INGREDIENTS
1/2 tsp. Culinary Secrets Garlic Powder
1 (4 lb.) boneless pork loin, tied
3 large leeks
6 shallots, finely chopped
2 c. dry white wine or vermouth
1 c. stock (chicken, pork or veal)
4 tbsp. Dijon mustard
Salt & pepper
 
DIRECTIONS
1. Rub pork loin with garlic powder, salt and pepper.
2. Roast in a 350 degree oven for 1 hour.
3. Slice leeks and place around pork.
4. Roast 1 hour longer. Remove roast from pan and keep warm on platter.
5. Add white wine to roasting pan and broil to taste.
6. Add stock and mustard. Reduce heat.
7. Slice pork and spoon leek sauce over meat. Makes 6 servings.
 

Slow Cooker BBQ Ribs

 
3 1/2 lb pork ribs
1/4 c packed brown sugar
1 tsp. Salt
1/2 tsp. Pepper
3 tbsp. Liquid smoke
2 cloves garlic, chopped
1 medium onion, sliced
1/2 c. cola
1 1/2 c. BBQ sauce (bottled)
 
Spray inside of 4 to 5 quart slow cooker with cooking spray.
 
Mix brown sugar , salt, pepper, liquid smoke and garlic; rub mixture onto ribs. Cut ribs into 4-inch pieces. 
 
Layer ribs and onion in slow cooker. Pour cola over ribs.
 
Cover and cook on low heat setting 8 to 9 hours or until tender. Remove ribs from slow cooker. Drain and discard liquid.
 
Pour barbecue sauce into shallow bowl. Dip ribs into sauce. Place ribs in slow cooker. Pour any remaining sauce over ribs. Cover and cook on low heat setting 1 hour.
 
Total cooking time may vary with appliance and setting.
